Dennis' Simple Meal PlanEating Healthy on a Budget

“Does it cost more to eat healthy”?

As a nutritionist practicing in midtown Manhattan, I am often asked this question. Most of my clientele, as well as the public at large believe the answer is yes! Well, I’ve never thought so, and in Spring 2010 I got the chance to test my theory.

Jessica Taft, head chef and founder of New York Food Coach (nyfoodcoach.com) and I combined our skills and set out to demonstrate that healthy eating and durable weight loss could fit into anyone’s lifestyle. Our original idea was to find a participant who fit our primary clientele demographic: Male and female professionals, 30 to 50 years old, aiming to lose 15 to 30 pounds. Dennis, being about a year out of college, but eagerly wanting to lose 20 pounds, didn’t fit our demographic to a T, but he turned out to be an even better subject, for he posed a particular challenge for us. We now had to design a meal plan and provide easy recipes that would fit into his meager monthly food budget of $150. That’s just $5.00 a day! I was thrilled to take on the challenge.
